Azorean style fillets

A fish dish filled with the true flavour of the Azores! Grouper fillets prepared using our Dona Graça’s pepper paste!

This dish, Azorean Style Fillets, is easy to prepare and is full of delicious flavours from the Azorean region. It is an excellent option for a dinner with family or friends, as it is practical to make and pleases all palates.


  • Grouper fillets;
  • 2 large onions;
  • A strand of olive oil;
  • Peppers to taste;
  • Earth Pepper;
  • White pepper;
  • 1 spoon of tomato pulp;
  • 1 spoon of Pepper Paste.


  • Season the grouper fillets with garlic and white pepper;
  • Let it settle for 24 hours;
  • In a pyrex, pour a drizzle of olive oil and an onion cut into slices to make the bed for the fillets;
  • Then place the fillets on top;
  • In a frying pan add a little more oil and the other sliced onion;
  • Then put the peppers, a spoonful of ground pepper, a spoonful of red pepper paste and a spoonful of tomato pulp;
  • Stir everything until smooth;
  • Once refined, pour the contents over the fillets in such a way as to cover all the fillets;
  • Finally, cover the pyrex with aluminium foil and bake for 15 minutes;
  • Then, remove the aluminium foil and let it toast a little.
