Azorean fava beans are a traditional dish of the islands, prepared with fresh fava beans and a variety of regional sausages. Discover the rich and comforting flavour that reflects the heritage of Azorean cuisine.
Ingredients:
- 1 kg. of fava beans;
- 250g of regional sausages;
- 1 large onion;
- 3 Cloves of garlic;
- 6 tablespoons of tomato pulp;
- 1 teaspoon of chilli paste;
- 1 bay leaf;
- 200ml of White Wine;
- 4 eggs;
- Olive oil q.s.;
- Salt q.s.;
- Water q.s.
Preparation:
- Braise the chopped onion and garlic, add the bay leaf and the sausage and leave over a low heat for a few minutes;
- Add the white wine, the tomato pulp and the chilli paste and let it boil;
- Then put the fava beans, water and salt, and let it cook;
- When the fava beans are cooked, add the eggs, one by one, and let them poach for five minutes.
